Revisions is a process-writing tool for the 21st century, customizable to fit your style. Revision makes it easy for students' assignments to be teacher or peer reviewed, and allows students to collaboratively work on assignments.

Audio Drop Box
Another tool that you may or may not know about is the Audio Drop box from CLEAR (Center for Language Education and Research). http://clear.msu.edu/teaching/online/ria/audioDropbox/
The teacher sets up an account and gets the HTML code to put the box on a website/wiki/moodle/whatever and the kids go in, enter their names, and record. They can listen to it first before submitting and re-record if they want.
Then, the teachers goes to the CLEAR site, logs in, and can listen to the recording and download as MP3 if needed/wanted.
This is a great resource because it is super simple to use and there is no software that the students and teachers need to learn.
